- Separate egg white from yolk. Set yolk aside, refrigerate the white.
- In a bowl, mix cottage cheese, egg yolk, cocoa powder and sugar until smooth.
- In a clean bowl, whip the chilled egg white to stiff peaks.
- In another bowl, whip the cold heavy cream to soft peaks.
- Gently fold the whipped egg white into the chocolate mixture using a spatula.
- Then gently fold in the whipped cream to preserve the airy texture.
- Spoon the mousse into a serving glass. Refrigerate for at least 30 minutes before serving.
