A simple, quick, and healthy dish: juicy shrimp with zucchini, bell pepper, and cherry tomatoes, baked in butter with garlic and herbs. Perfect for a light dinner.
- Preheat the oven to 200°C (390°F).
- Thaw the shrimp, peel them (leaving the tail on is optional), and devein. Pat dry with a paper towel.
- Dice the zucchini and bell pepper into medium cubes (about 1.5-2 cm). Halve the cherry tomatoes. Finely chop the garlic.
- Take a small baking dish. Add the chopped vegetables to it, season with salt and pepper, add half of the chopped garlic, and mix well.
- Arrange the prepared shrimp evenly on top of the vegetable bed.
- Distribute the cold butter pats over the shrimp and sprinkle with the remaining garlic.
- Bake in the preheated oven for 10-12 minutes. The dish is ready when the shrimp turn pink and opaque, and the butter has melted, combining with the vegetable juices. Be careful not to overcook the shrimp to prevent them from becoming rubbery.
- Squeeze the juice from a lemon slice over the finished dish and sprinkle generously with finely chopped fresh parsley.
- Serve immediately while the buttery sauce is hot. You can eat it straight from the baking dish.
