Juicy pork skewers with aromatic grilled vegetables and spicy adjika — a perfect healthy dish for a satisfying lunch.

  1. Cut the pork tenderloin into cubes about 3x3 cm. Season with salt, pepper and coat with half of the spicy adjika. Leave to marinate for 15-20 minutes.
  2. Slice the zucchini into 1 cm thick rounds. Remove the seeds from the bell pepper and cut into large squares. Cut the red onion into large wedges.
  3. Soak wooden skewers in water for 10 minutes to prevent burning. Thread the pork onto the skewers, alternating with pieces of onion and pepper.
  4. Heat a grill pan or a regular non-stick frying pan. Lightly grease with olive oil.
  5. Place the mini skewers on the hot pan. Fry on all sides for about 3-4 minutes each, until golden brown and the meat is fully cooked.
  6. At the same time, on another part of the pan or separately, fry the zucchini slices and cherry tomatoes until soft and grill marks appear, about 2 minutes per side.
  7. Serve the mini skewers with grilled vegetables, accompanied by the remaining fresh adjika for dipping.
