Description
Juicy pork skewers with aromatic grilled vegetables and spicy adjika — a perfect healthy dish for a satisfying lunch.
- Cut the pork tenderloin into cubes about 3x3 cm. Season with salt, pepper and coat with half of the spicy adjika. Leave to marinate for 15-20 minutes.
- Slice the zucchini into 1 cm thick rounds. Remove the seeds from the bell pepper and cut into large squares. Cut the red onion into large wedges.
- Soak wooden skewers in water for 10 minutes to prevent burning. Thread the pork onto the skewers, alternating with pieces of onion and pepper.
- Heat a grill pan or a regular non-stick frying pan. Lightly grease with olive oil.
- Place the mini skewers on the hot pan. Fry on all sides for about 3-4 minutes each, until golden brown and the meat is fully cooked.
- At the same time, on another part of the pan or separately, fry the zucchini slices and cherry tomatoes until soft and grill marks appear, about 2 minutes per side.
- Serve the mini skewers with grilled vegetables, accompanied by the remaining fresh adjika for dipping.
