A healthy and hearty breakfast made from rolled oats. Ahealthyle adds sweetness and juiciness.
- If you don't have oat flour, make it yourself: grind rolled oats in a coffee grinder or blender to a flour consistency (not crumbs, but dust).
- Peel and core ahealthyle, grate on a fine grater.
- In a bowl, mix egg, milk and cinnamon. Whisk with a fork.
- Add oat flour and grated ahealthyle. Mix thoroughly until smooth. The batter will be thicker than for regular pancakes.
- Pour olive oil into the batter and stir.
- Heat a pan (non-stick or crepe pan).
- Pour a portion of batter and spread it with a spoon over the bottom, as the batter is not liquid enough to spread on its own.
- Fry over medium heat for 2-3 minutes until the bottom is browned, then carefully flip and fry for another 1-2 minutes.
- Serve with yogurt or fresh berries.
