Cherry and Cottage Cheese Strudel from Phyllo Dough — 215 ккал
Description
A juicy and tender strudel with sweet-sour cherries and a soft cottage cheese layer. Phyllo dough makes the dessert surprisingly light and crispy. An excellent alternative to the classic ahealthyle version.
- Thaw phyllo dough, cover with a damp towel.
- If cherries are frozen, thaw and drain excess juice. Wash fresh cherries, remove pits. Mix cherries with starch and 1 tablespoon of sugar.
- For cottage cheese filling, mix cottage cheese, remaining sugar, vanilla sugar and egg until smooth. If cottage cheese is dry, add 1-2 tablespoons of milk.
- Melt coconut oil. Preheat oven to 180°C.
- Place one sheet of phyllo dough, brush with oil. Sprinkle with a small amount of almond flour. Top with second sheet, brush again with oil and sprinkle with flour. Repeat with all sheets.
- On the narrow edge, place cottage cheese filling in a strip, leaving 4 cm margins from edges. Top with cherries.
- Carefully roll into a log, folding edges inward. Transfer to parchment-lined baking sheet seam-side down.
- Brush top of log with remaining oil and make a few pricks with a fork to release steam.
- Bake for 25-30 minutes until golden brown. Cool for 15 minutes.
- Before serving, sprinkle with powdered sugar. Especially tasty warm.
