Description

Warm apple strudel made from the thinnest dough with cinnamon and raisins, served with a scoop of vanilla ice cream

  1. Sift the flour into a deep bowl, add salt, vegetable oil, and warm sparkling water. Knead into a soft, elastic dough, adding a little more flour if needed. Knead for at least 5 minutes.
  2. Form the dough into a ball, brush the surface with a little vegetable oil, cover with plastic wrap, and let it rest at room temperature for 30 minutes.
  3. Peel and core the apple, then cut it into thin slices or small cubes. Mix with sugar, cinnamon, and washed raisins.
  4. Spread a clean cotton kitchen towel on the table and dust it lightly with flour. Place the dough on the towel and roll it out with a rolling pin as thinly as possible.
  5. Carefully stretch the dough by hand from the center outwards, using the backs of your hands, until it is almost transparent like paper. Cut off or stretch any thick edges.
  6. Melt half of the butter. Using a brush, coat the thin sheet of dough with the melted butter, leaving an inch of the edges dry.
  7. Spoon the apple filling in a narrow strip along one edge of the dough. Using the towel to help, carefully lift the edge of the dough over the filling and start rolling it into a log. Continue rolling, using the towel, until the end of the dough. Tuck in the sides to seal in the juices.
  8. Preheat the oven to 190°C (375°F). Line a baking sheet with parchment paper. Transfer the strudel to the baking sheet, seam-side down.
  9. Brush the top of the strudel with the remaining melted butter. Bake for 30-35 minutes until golden brown and crispy.
  10. Let the finished strudel cool for 5 minutes. Dust with powdered sugar. Serve warm with a scoop of vanilla ice cream on the side.
