Spelt with Mushrooms and Turkey
Description
A hearty and flavorful dish of whole grain spelt with tender turkey fillet and porcini mushrooms.
- Pour hot water over the dried porcini mushrooms and leave to soak for 15 minutes.
- Rinse the spelt and boil in salted water according to package instructions (about 25-30 minutes) until tender.
- Cut the turkey fillet into small cubes or thin strips.
- Heat sunflower oil in a frying pan and sear the turkey over high heat until golden brown on all sides.
- Reduce heat, season with salt and pepper, and cook for another 3-4 minutes. Remove the meat from the pan.
- In the same pan, melt the butter. Add finely chopped onion, carrot, and celery root. Sauté until soft, 5-7 minutes.
- Add minced garlic and the soaked mushrooms (with their strained soaking liquid). Cook for another 1-2 minutes.
- Return the turkey to the pan, add the cooked spelt, and mix well. Warm everything together for 2-3 minutes.
- Sprinkle with finely chopped parsley and adjust salt and pepper to taste if needed.
- Plate the dish and serve immediately.
