Description

A hearty and flavorful dish of whole grain spelt with tender turkey fillet and porcini mushrooms.

  1. Pour hot water over the dried porcini mushrooms and leave to soak for 15 minutes.
  2. Rinse the spelt and boil in salted water according to package instructions (about 25-30 minutes) until tender.
  3. Cut the turkey fillet into small cubes or thin strips.
  4. Heat sunflower oil in a frying pan and sear the turkey over high heat until golden brown on all sides.
  5. Reduce heat, season with salt and pepper, and cook for another 3-4 minutes. Remove the meat from the pan.
  6. In the same pan, melt the butter. Add finely chopped onion, carrot, and celery root. Sauté until soft, 5-7 minutes.
  7. Add minced garlic and the soaked mushrooms (with their strained soaking liquid). Cook for another 1-2 minutes.
  8. Return the turkey to the pan, add the cooked spelt, and mix well. Warm everything together for 2-3 minutes.
  9. Sprinkle with finely chopped parsley and adjust salt and pepper to taste if needed.
  10. Plate the dish and serve immediately.
