Description

An original contrast salad: the sourness of sorrel, the sweetness of strawberries and warm fried Adyghe cheese with a honey-mustard dressing.

  1. Wash the sorrel and strawberries. Dry them. Cut the strawberries into slices, tear or cut the sorrel coarsely.
  2. Make the dressing: mix olive oil, lemon juice, Dijon mustard, honey and poppy seeds. Whisk until emulsified.
  3. Cut the Adyghe cheese into slices about 1 cm thick.
  4. In a dry pan, toast the pumpkin seeds for a couple of minutes until fragrant, then remove to a plate.
  5. In the same pan, melt the butter and fry the cheese slices on both sides until golden brown.
  6. Assemble the salad: put sorrel and strawberries on a plate, top with warm fried cheese.
  7. Pour the honey-mustard dressing generously over the salad and sprinkle with pumpkin seeds. Serve immediately.
