Sorrel Panna Cotta with Strawberry Tartare
Description
Delicate creamy dessert with a slight sorrel sourness and fresh strawberry tartare
- Soak gelatin in 2 tablespoons of cold water for 10 minutes
- Wash, dry and finely chop the sorrel
- In a saucepan combine cream, sugar and vanilla sugar, bring to a boil
- Add chopped sorrel to the hot cream, stir and remove from heat
- Blend the mixture with an immersion blender until smooth
- Add the soaked gelatin to the warm sorrel cream mixture and stir until fully dissolved
- Strain the mixture through a fine sieve
- Pour the panna cotta into molds and refrigerate for 3-4 hours until fully set
- For the tartare, dice the strawberries into small cubes
- Mix strawberries with powdered sugar
- Place the strawberry tartare on top of the set panna cotta
- Garnish with fresh mint leaves and serve
