Description

Delicate creamy dessert with a slight sorrel sourness and fresh strawberry tartare

  1. Soak gelatin in 2 tablespoons of cold water for 10 minutes
  2. Wash, dry and finely chop the sorrel
  3. In a saucepan combine cream, sugar and vanilla sugar, bring to a boil
  4. Add chopped sorrel to the hot cream, stir and remove from heat
  5. Blend the mixture with an immersion blender until smooth
  6. Add the soaked gelatin to the warm sorrel cream mixture and stir until fully dissolved
  7. Strain the mixture through a fine sieve
  8. Pour the panna cotta into molds and refrigerate for 3-4 hours until fully set
  9. For the tartare, dice the strawberries into small cubes
  10. Mix strawberries with powdered sugar
  11. Place the strawberry tartare on top of the set panna cotta
  12. Garnish with fresh mint leaves and serve
