Beef Tails with Pearl Barley
Description
A hearty and rich dish of stewed beef tails with fluffy pearl barley, cooked at home.
- Rinse the beef tails and chop into pieces. Cover with cold water and bring to a boil. Drain the water and rinse the tails.
- Heat sunflower oil in a pot. Fry the tails until golden brown.
- Add diced onion and coarsely grated carrot. Fry for 5 minutes.
- Pour in 500 ml of hot water, add bay leaf, peppercorns and salt. Bring to a boil, reduce heat and simmer covered for 2 hours.
- Rinse the pearl barley. Add to the tails and stir.
- Simmer for another 40-50 minutes until the pearl barley is cooked, stirring occasionally.
- Finally, add minced garlic and stir. Let it rest under the lid for 10-15 minutes.
