Description

A hearty and rich dish of stewed beef tails with fluffy pearl barley, cooked at home.

  1. Rinse the beef tails and chop into pieces. Cover with cold water and bring to a boil. Drain the water and rinse the tails.
  2. Heat sunflower oil in a pot. Fry the tails until golden brown.
  3. Add diced onion and coarsely grated carrot. Fry for 5 minutes.
  4. Pour in 500 ml of hot water, add bay leaf, peppercorns and salt. Bring to a boil, reduce heat and simmer covered for 2 hours.
  5. Rinse the pearl barley. Add to the tails and stir.
  6. Simmer for another 40-50 minutes until the pearl barley is cooked, stirring occasionally.
  7. Finally, add minced garlic and stir. Let it rest under the lid for 10-15 minutes.
