Description

Quick and hearty pasta with canned tuna, tomatoes and olives

  1. Boil the pasta in salted water until al dente according to package instructions.
  2. While the pasta is cooking, finely chop the red onion and garlic. Remove seeds from chili pepper and chop finely.
  3. Heat olive oil in a pan over medium heat, sauté onion until soft for 2-3 minutes, add garlic and chili, cook for 30 more seconds.
  4. Add chopped tomatoes to the pan and simmer for 3-4 minutes until thickened. Season with salt, pepper and a pinch of sugar.
  5. Break the tuna into large chunks with a fork and add to the tomato sauce, warm through for 1-2 minutes.
  6. Drain the pasta, reserving some cooking water.
  7. Transfer the pasta to the pan with the sauce, add olives and toss. Add a little pasta water if needed.
  8. Serve the pasta topped with grated parmesan and fresh arugula leaves.
