Description

Baked potatoes stuffed with smoked chicken, cheese and sour cream. A simple and hearty recipe.

  1. Preheat the oven to 200°C (400°F).
  2. Wash the potatoes thoroughly. Cut each potato in half lengthwise. Brush the cut sides and skin with sunflower oil.
  3. Place the potatoes cut-side down on a baking sheet and bake for 35-40 minutes until soft.
  4. While the potatoes are baking, finely chop the smoked chicken breast.
  5. Grate the cheese on a coarse grater.
  6. Finely chop the dill.
  7. Mince the garlic.
  8. When the potatoes are ready, let them cool slightly. Carefully scoop out the flesh from each half, leaving walls about 5 mm thick.
  9. Mash the potato flesh with a fork.
  10. Mix the flesh with the chicken, half of the cheese (25g), sour cream, dill, garlic, salt, and pepper.
  11. Fill the potato skins with the mixture.
  12. Sprinkle the remaining cheese on top.
  13. Return the potatoes to the oven and bake for another 10-15 minutes until the cheese is golden brown.
  14. Serve hot.
