Stuffed Potatoes with Chicken, Cheese and Sour Cream
Description
Baked potatoes stuffed with smoked chicken, cheese and sour cream. A simple and hearty recipe.
- Preheat the oven to 200°C (400°F).
- Wash the potatoes thoroughly. Cut each potato in half lengthwise. Brush the cut sides and skin with sunflower oil.
- Place the potatoes cut-side down on a baking sheet and bake for 35-40 minutes until soft.
- While the potatoes are baking, finely chop the smoked chicken breast.
- Grate the cheese on a coarse grater.
- Finely chop the dill.
- Mince the garlic.
- When the potatoes are ready, let them cool slightly. Carefully scoop out the flesh from each half, leaving walls about 5 mm thick.
- Mash the potato flesh with a fork.
- Mix the flesh with the chicken, half of the cheese (25g), sour cream, dill, garlic, salt, and pepper.
- Fill the potato skins with the mixture.
- Sprinkle the remaining cheese on top.
- Return the potatoes to the oven and bake for another 10-15 minutes until the cheese is golden brown.
- Serve hot.
