Description

Lean pork with crispy vegetables in a homemade sweet and sour sauce based on honey, vinegar and soy sauce.

  1. Cut the pork into thin strips or small cubes, season with salt and pepper, and coat with 1 tbsp of corn starch.
  2. Heat a pan with olive oil over high heat. Fry the pork until golden brown on all sides (5-7 minutes). Transfer to a plate.
  3. Slice the carrot into thin strips, onion into half rings, bell pepper and zucchini into strips.
  4. In the same pan, stir-fry the vegetables over medium heat for 5 minutes, stirring occasionally. Vegetables should remain slightly crunchy.
  5. Add minced garlic and sliced chili pepper, cook for another 30 seconds.
  6. Return the pork to the pan, stir with the vegetables.
  7. In a small bowl, mix soy sauce, apple cider vinegar and honey. Pour the sauce into the pan.
  8. Cook everything together over medium heat for 2-3 minutes, stirring constantly, until the sauce thickens and coats the meat and vegetables.
  9. Serve hot. Optionally sprinkle with fresh herbs.
