Description

Classic French upside-down pie with caramelized apples and plums on puff pastry

  1. Thaw puff pastry at room temperature for 30-40 minutes
  2. Peel and core apples, cut into large wedges
  3. Halve plums and remove pits
  4. Sprinkle fruits with lemon juice to prevent browning
  5. Melt butter in a heavy-bottomed pan and spread sugar evenly
  6. Heat over medium heat until golden caramel forms, without stirring
  7. Arrange apple wedges and plums tightly over caramel, cook for 10-12 minutes until fruits soften
  8. Remove pan from heat and let cool slightly
  9. Roll out puff pastry into a circle slightly larger than pan diameter on floured surface
  10. Cover fruits with pastry, tucking edges inside the pan
  11. Make several fork pricks for steam to escape
  12. Bake in preheated oven at 200°C for 20-25 minutes until pastry is golden
  13. Remove pie and let stand for 5 minutes
  14. Cover pan with a plate and carefully flip the pie over
  15. Serve warm with a scoop of plombir ice cream
