Apple Tarte Tatin with Plums
Description
Classic French upside-down pie with caramelized apples and plums on puff pastry
- Thaw puff pastry at room temperature for 30-40 minutes
- Peel and core apples, cut into large wedges
- Halve plums and remove pits
- Sprinkle fruits with lemon juice to prevent browning
- Melt butter in a heavy-bottomed pan and spread sugar evenly
- Heat over medium heat until golden caramel forms, without stirring
- Arrange apple wedges and plums tightly over caramel, cook for 10-12 minutes until fruits soften
- Remove pan from heat and let cool slightly
- Roll out puff pastry into a circle slightly larger than pan diameter on floured surface
- Cover fruits with pastry, tucking edges inside the pan
- Make several fork pricks for steam to escape
- Bake in preheated oven at 200°C for 20-25 minutes until pastry is golden
- Remove pie and let stand for 5 minutes
- Cover pan with a plate and carefully flip the pie over
- Serve warm with a scoop of plombir ice cream
