Description

Classic Chicken Tabaka — crispy outside, juicy inside, baked under a press with aromatic garlic and spices

  1. Rinse chicken, pat dry. Cut along the breastbone without cutting through the back, flatten it like a book. Cover with cling film and lightly pound the joints and breastbone to make the carcass flat.
  2. Grate garlic or press through a crusher. Mix with olive oil, lemon juice, khmeli-suneli, salt and pepper.
  3. Rub chicken with garlic mixture on all sides, leave to marinate for 30 minutes at room temperature.
  4. In a large oven-safe pan, melt butter. Place chicken skin-side down, press down with a weight (heavy pan or pot with water).
  5. Fry over medium heat for 10 minutes, then flip, press again with weight and fry for another 10 minutes.
  6. Preheat oven to 200°C. Transfer the pan with chicken to the oven (without weight) and bake for 15-20 minutes until fully cooked and crispy.
  7. Serve whole, drizzled with pan juices, with spicy adjika and a lemon wedge.
