Chicken Tabaka Baked with Garlic
Description
Classic Chicken Tabaka — crispy outside, juicy inside, baked under a press with aromatic garlic and spices
- Rinse chicken, pat dry. Cut along the breastbone without cutting through the back, flatten it like a book. Cover with cling film and lightly pound the joints and breastbone to make the carcass flat.
- Grate garlic or press through a crusher. Mix with olive oil, lemon juice, khmeli-suneli, salt and pepper.
- Rub chicken with garlic mixture on all sides, leave to marinate for 30 minutes at room temperature.
- In a large oven-safe pan, melt butter. Place chicken skin-side down, press down with a weight (heavy pan or pot with water).
- Fry over medium heat for 10 minutes, then flip, press again with weight and fry for another 10 minutes.
- Preheat oven to 200°C. Transfer the pan with chicken to the oven (without weight) and bake for 15-20 minutes until fully cooked and crispy.
- Serve whole, drizzled with pan juices, with spicy adjika and a lemon wedge.
