A balanced healthy salad with tender veal, pan-fried oyster mushrooms and a light cream cheese dressing. Perfect for a hearty lunch or a light dinner.
- Pat the veal dry with a paper towel, season with salt and pepper, and brush with 1 tsp of olive oil. Grill or pan-fry over medium-high heat for 4-5 minutes per side until medium doneness. Let the meat rest for 5 minutes, then slice thinly against the grain.
- Tear or slice the oyster mushrooms into bite-sized pieces. Dry-fry them in a hot pan until the liquid evaporates, then add the remaining 1 tsp of olive oil and sauté until golden brown. Season with salt at the end.
- Make the cream cheese dressing: mix the cream cheese with minced garlic, lemon juice and a little bit of cold water (about 1 tsp) until it reaches a pouring consistency. Season with black pepper.
- Wash and dry the lettuce and arugula, then tear into pieces. Halve the cherry tomatoes.
- Assemble the salad: place a bed of greens on a plate, top with veal slices and sautéed oyster mushrooms. Add the cherry tomato halves.
- Drizzle with the cream cheese dressing or serve it on the side. Add extra freshly ground black pepper if desired.
