A balanced healthy salad with tender veal, pan-fried oyster mushrooms and a light cream cheese dressing. Perfect for a hearty lunch or a light dinner.

  1. Pat the veal dry with a paper towel, season with salt and pepper, and brush with 1 tsp of olive oil. Grill or pan-fry over medium-high heat for 4-5 minutes per side until medium doneness. Let the meat rest for 5 minutes, then slice thinly against the grain.
  2. Tear or slice the oyster mushrooms into bite-sized pieces. Dry-fry them in a hot pan until the liquid evaporates, then add the remaining 1 tsp of olive oil and sauté until golden brown. Season with salt at the end.
  3. Make the cream cheese dressing: mix the cream cheese with minced garlic, lemon juice and a little bit of cold water (about 1 tsp) until it reaches a pouring consistency. Season with black pepper.
  4. Wash and dry the lettuce and arugula, then tear into pieces. Halve the cherry tomatoes.
  5. Assemble the salad: place a bed of greens on a plate, top with veal slices and sautéed oyster mushrooms. Add the cherry tomato halves.
  6. Drizzle with the cream cheese dressing or serve it on the side. Add extra freshly ground black pepper if desired.
