Chicken & Peanut Sauce Spring Rolls
Description
Fresh rice paper rolls with baked chicken, crunchy vegetables, and a sugar-free spicy peanut dip.
- Boil or bake the chicken fillet without oil until cooked, then slice into thin strips.
- Cut the carrot and cucumber into thin julienne strips or use a grater.
- Make the sauce: mix peanut butter, soy sauce, lime juice, and water until smooth.
- Dip a rice paper sheet in warm water and place it on a board.
- Layer lettuce, carrot, cucumber, and chicken in the center of the sheet.
- Fold the spring roll like an envelope, tucking in the sides. Repeat with the remaining sheets.
- Serve the rolls with the peanut dipping sauce.
