Currant Pie with Sour Cream Filling
Description
Crumbly shortcrust pie with black and red currants topped with a delicate sour cream filling
- Beat softened butter with sugar and vanilla sugar until fluffy.
- Add the egg and mix until smooth.
- Sift flour with baking powder and knead a soft dough.
- Press the dough into the bottom and sides of a small baking dish.
- Wash and dry the currants, then mix with corn starch.
- Spread the berries evenly over the dough.
- For the cream, mix sour cream with sugar until the sugar dissolves.
- Pour the sour cream filling over the berries.
- Bake in a preheated 180°C oven for about 30-35 minutes until done.
- Cool the pie before serving.
