Sweet Potato Gnocchi with Cheese Sauce

Tender sweet potato gnocchi with aromatic creamy cheese sauce, ham and sage
- Peel the sweet potato, cut into cubes and boil until tender (about 15-20 minutes). Drain, mash into puree and cool completely.
- Add the egg and salt to the cooled puree, mix well.
- Gradually add flour and semolina, knead a soft, slightly sticky dough. Add more flour if needed.
- Dust the work surface with flour. Roll the dough into ropes 2 cm thick and cut into 2 cm pieces. Dust gnocchi with flour.
- Bring salted water to a boil. Cook gnocchi in batches: they are done when they float to the surface (2-3 minutes). Remove with a slotted spoon.
- For the sauce: heat sunflower oil in a pan, fry finely chopped garlic and diced ham (1-2 minutes).
- Add processed cheese and 3-4 tbsp of gnocchi cooking water. Stir until smooth.
- Add zest of half a lemon, salt and pepper to taste. Stir well.
- Add gnocchi to the pan with sauce, gently toss and warm through for 1-2 minutes.
