Description

Quick pan-fried pies made with yeast-free kefir batter, no proofing needed. Soft, with a classic boiled egg and green onion filling.

  1. Boil 1 egg hard (about 10 minutes), cool, peel and chop finely.
  2. Finely chop the green onions and mix with the boiled egg, lightly salt — this is the filling.
  3. In a bowl, mix kefir, sour cream, raw egg, sugar, salt and baking soda. Whisk together.
  4. Gradually add sifted flour and knead a soft, slightly sticky dough.
  5. Grease your hands with vegetable oil. Take a portion of dough, flatten into a disc, place some filling in the center.
  6. Pinch the edges to form a pie and flatten it slightly.
  7. Heat a frying pan with vegetable oil over medium heat.
  8. Fry the pies for 2–3 minutes on each side until golden brown.
  9. For the sauce, mix the remaining sour cream with adjika. Serve the pies hot with the sauce.
