Cod with Edamame in Creamy Sauce
Description
Delicate cod fillet with soybeans in a light creamy sauce — a perfect healthy dinner, rich in protein and healthy fats.
- Pat the cod fillet dry with a paper towel and season with salt and pepper.
- Heat half of the olive oil in a skillet over medium heat. Sear the cod for 2-3 minutes per side until golden brown. Transfer to a plate.
- Add the remaining oil and finely chopped garlic to the same skillet. Sauté for 30 seconds until fragrant.
- Pour in the cream and add the frozen edamame. Simmer on low heat for 5-7 minutes until the beans are tender and the sauce has slightly thickened.
- Return the cod to the skillet and warm everything together for 2 minutes, spooning the sauce over the fish.
- Serve sprinkled with finely chopped dill.
