Description
Diet version of the classic salad with light sauce and boiled vegetables
- Boil beetroot, carrot, potato and egg until done, cool and peel
- Grate beetroot on a fine grater, squeeze out excess moisture
- Grate carrot and potato separately on a fine grater
- Separate egg white from yolk, grate egg white finely, set yolk aside for garnish
- Clean herring from skin and bones, dice finely
- Finely chop onion, optionally scald with boiling water for mildness
- Make the sauce: mix yogurt, sour cream and mustard until smooth
- Layer: potato, a little sauce, herring with onion, carrot, sauce, egg white, sauce, beetroot
- Top with remaining sauce and sprinkle with grated egg yolk
- Refrigerate the salad for at least 30 minutes to soak before serving
