Warm Salad with Roasted Pumpkin
Description
Aromatic roasted pumpkin with arugula and nuts — a perfect autumn dinner
- Preheat the oven to 200°C (400°F).
- Peel and deseed the pumpkin, then cut into medium cubes (about 2-3 cm).
- Place the pumpkin on a baking sheet lined with parchment paper. Drizzle with 1 tablespoon of olive oil, and sprinkle with dried thyme, salt, and pepper. Toss to coat and roast for 20-25 minutes until soft and lightly golden.
- While the pumpkin is roasting, roughly chop the walnuts. Dry-toast the walnuts and pumpkin seeds in a skillet over medium heat for 1-2 minutes until fragrant.
- In a bowl, toss together the salad mix and arugula.
- Make the dressing: whisk together 1 tablespoon of olive oil, balsamic vinegar, a small pinch of salt, and pepper.
- Arrange the hot roasted pumpkin over the salad greens. Sprinkle with the toasted nuts and seeds.
- Drizzle the salad with the dressing and serve immediately.
