Juicy Healthy Chebureki with Veal
Description
Real chebureki with meat and broth inside, but in a healthy version. Thin whole wheat dough and juicy veal filling.
- Prepare the dough: mix two types of flour, pour in sparkling water and 1 teaspoon of olive oil. Knead a stiff dough and let it rest for 20 minutes.
- Mince the veal and onion through a meat grinder. Add minced garlic, salt, pepper.
- Pour ice-cold beef broth into the mince and mix vigorously until completely absorbed. This will make the filling maximally juicy with 'broth' inside.
- Divide the dough into 3 equal parts. Roll out each thinly into a sheet 1-2 mm thick. Cut out a perfect circle using a plate.
- Spread the filling evenly on one half. Cover with the other half, expelling the air. Carefully seal the edge with a fork so the juice does not leak out.
- Heat the remaining oil in a pan. Fry the chebureki over medium heat for 5 minutes on each side until golden brown. There should be very little oil, just enough to grease the surface.
