Description

Crispy breaded chicken schnitzel served on romaine lettuce with a Caesar sauce made from yogurt, parmesan and mustard.

  1. Cut the chicken breast in half lengthwise and gently pound through plastic wrap to about 1 cm thickness. Season with salt and pepper on both sides.
  2. Beat the egg in a bowl. Dip the chicken fillet into the egg, then coat thoroughly with breadcrumbs.
  3. Heat a pan with sunflower oil over medium heat. Fry the schnitzel for 4-5 minutes on each side until golden brown.
  4. For the sauce, mix yogurt, grainy mustard, a few drops of fish sauce and lemon juice. Add half of the grated parmesan and mix.
  5. Wash and dry the romaine lettuce leaves, tear into large pieces and place on a plate.
  6. Slice the cooked schnitzel into strips and place over the lettuce.
  7. Drizzle with the sauce and sprinkle with the remaining grated parmesan. Serve immediately.
