Eclair Roll with Figs and Cream Cheese
Description
Delicate choux pastry roll with airy cream cheese filling and fresh figs
- Preheat oven to 180°C. In a saucepan combine milk, water (50 ml), sugar, salt and butter. Bring to a boil.
- Add all flour at once, stir quickly and cook the dough for 1-2 minutes until it forms a ball and pulls away from the sides.
- Transfer dough to a bowl, let cool slightly. Add eggs one at a time, mixing thoroughly after each.
- Place dough into a piping bag. On a parchment-lined baking sheet, pipe strips in a roll shape (snake pattern) close together.
- Bake for 25-30 minutes until golden. Do not open the oven for the first 15 minutes.
- Cool the baked roll on a wire rack.
- For the cream: beat softened butter with powdered sugar until fluffy. Add cream cheese and condensed milk, beat until smooth.
- Slice figs thinly.
- Cut the cooled roll horizontally into two layers. Spread cream on the bottom layer, arrange fig slices.
- Cover with the top layer, press gently. Dust with powdered sugar and decorate with fresh figs and mint.
- Refrigerate for 30 minutes before serving.
