Description

Fragrant paella with tuna, cod and vegetables — a healthy version of the classic Spanish dish

  1. Dice zucchini, bell pepper and tomatoes into medium cubes
  2. Mince garlic, green onion and parsley
  3. Cut cod fillet into 3-4 cm pieces
  4. Drain the canned tuna and flake it with a fork
  5. Heat olive oil in a heavy-bottomed pan over medium heat
  6. Sauté garlic and green onion for 1 minute until fragrant
  7. Add zucchini and bell pepper, cook for 3-4 minutes, stirring
  8. Add tomatoes and turmeric, stir and simmer for 2 minutes
  9. Add rice and stir to coat it with oil and spices
  10. Pour in hot water, add salt and pepper, bring to a boil
  11. Reduce heat to low and cook for 12 minutes without stirring
  12. Place cod pieces and tuna on top, slightly pressing them into the rice
  13. Cover with a lid and cook for another 8-10 minutes until rice and fish are done
  14. Remove from heat and let rest covered for 5 minutes
  15. Sprinkle with fresh parsley and serve hot
