Description

Festive appetizer in the form of a cake: layers of herring, potatoes, carrots and beets with a delicate sauce based on mayonnaise, sour cream and mustard, stabilized with gelatin.

  1. Boil potatoes, carrots, beets and egg until done. Cool and peel.
  2. Grate vegetables and egg on a fine grater separately.
  3. Cut herring into small cubes, add finely chopped green onion and mix.
  4. Soak gelatin in 10 ml of cold water for 5-10 minutes.
  5. Mix 48 g of mayonnaise, sour cream, mustard and salt. Slightly warm the sauce (do not boil), add swollen gelatin and stir until fully dissolved.
  6. Line a small round mold with plastic wrap.
  7. Put half of the beets as the first layer, press lightly.
  8. Brush beets with a thin layer of sauce. Put half of the carrots, brush with sauce.
  9. Put half of the potatoes, brush with sauce.
  10. Put the egg, brush with sauce.
  11. Put herring with onion, brush with sauce.
  12. Repeat layers in reverse order: remaining potatoes, carrots and beets, brushing each layer with sauce.
  13. Cover the mold with plastic wrap and refrigerate for at least 3 hours (preferably overnight) until fully set.
  14. Before serving, flip the mold onto a plate, remove plastic wrap.
  15. Decorate the top of the cake with remaining mayonnaise (1 g) and finely chopped dill.
