Crispy ciabatta with tender turkey fillet, melted cheese and sweet-sour cranberry sauce

  1. Slice the turkey into thin strips, season with salt and pepper, and fry in hot sunflower oil until golden brown.
  2. Place the cranberries in a saucepan, add sugar, a sprig of rosemary and 2–3 tbsp of water. Simmer over medium heat until thickened into a sauce.
  3. Cut the ciabatta in half, then slice each half lengthwise. Toast on a dry pan until crispy.
  4. Cut the garlic clove in half and rub it over the hot ciabatta surface.
  5. Slice the Camembert into thin pieces and the Suluguni into plates.
  6. Place the fried turkey on the bottom half of the ciabatta, top with Camembert and Suluguni.
  7. Cover with the top half of the ciabatta and place under the grill or in a preheated oven for 2–3 minutes until the cheese melts.
  8. Drizzle with the cranberry sauce before serving.
