Description

Asian-style dish with shrimp, vegetables and homemade teriyaki sauce. Can be served as a main course or a hearty salad.

  1. Prepare teriyaki sauce: in a small saucepan, combine soy sauce, white wine, water, sugar, lemon juice, finely chopped garlic, chili and grated ginger. Bring to a boil and simmer for 3-4 minutes over low heat.
  2. Dissolve starch in 1 tablespoon of cold water and pour into the sauce in a thin stream, stirring constantly. Cook until thickened for about 1 minute. Remove from heat.
  3. Break broccoli into florets and blanch in boiling salted water for 2 minutes, then transfer to ice or rinse with cold water.
  4. Cut carrot into thin strips or rounds. Cut red onion into half rings. Slice champignons. Cut cherry tomatoes in half.
  5. Cut ginger into thin strips.
  6. Heat sunflower oil in a frying pan over high heat. Add ginger and fry for 30 seconds until fragrant.
  7. Add carrot and red onion to the pan, stir-fry for 2-3 minutes, stirring.
  8. Add champignons and cook for another 2 minutes.
  9. Add shrimp and sauté for 2-3 minutes until color changes if raw. If shrimp are already cooked, just heat through for 1-2 minutes.
  10. Add broccoli and cherry tomatoes, stir.
  11. Pour 50 ml of teriyaki sauce into the pan, mix well and cook everything together for 1-2 minutes until vegetables and shrimp are glazed.
  12. Transfer to a plate, sprinkle with sesame seeds and chopped green onion. Serve immediately.
