Description

Fresh Hawaiian dish with marinated salmon, avocado, rice and vegetables

  1. Cook sushi rice according to package instructions, cool to room temperature
  2. Cut fresh salmon into cubes about 2x2 cm
  3. For salmon marinade: mix juice of half a lime, 2 tbsp soy sauce and 1 tsp sugar
  4. Marinate salmon for 10-15 minutes
  5. Thinly slice red cabbage
  6. Cut cucumber into thin slices or cubes
  7. Cut avocado in half, remove the pit and dice the flesh
  8. For dressing: mix mustard, vegetable oil, apple cider vinegar, 4 tbsp soy sauce and 1 tsp sugar
  9. Place rice in a deep bowl
  10. Arrange marinated salmon, avocado, cucumber, red cabbage and chuka seaweed on top
  11. Drizzle with dressing
  12. Sprinkle with sesame seeds and garnish with fresh cilantro
  13. Serve immediately
