Description

Aromatic savory pastry made from buckwheat flour with caramelized onions and feta cheese

  1. In a deep bowl, mix buckwheat flour, whole wheat flour and salt.
  2. Add cold butter cut into cubes and rub into crumbs.
  3. Add half an egg and cold water, knead a firm dough.
  4. Wrap the dough in plastic wrap and put in the fridge for 15-20 minutes.
  5. Slice all types of onions into thin half-rings.
  6. Heat a frying pan with sunflower oil and sauté the onions until soft and slightly caramelized, 5-7 minutes.
  7. Preheat the oven to 180°C (350°F).
  8. On a floured surface, roll out the dough into a circle about 3-4 mm thick.
  9. Place the sautéed onions in the center of the rolled dough, leaving about 4-5 cm around the edges.
  10. Place cherry tomatoes cut in half and pieces of feta cheese on top.
  11. Sprinkle the filling with finely chopped basil.
  12. Fold the edges of the dough over the filling, forming pleats.
  13. Transfer the galette to a baking sheet lined with parchment paper.
  14. Brush the edges of the dough with olive oil.
  15. Bake in the oven for 25-30 minutes until golden brown.
  16. Let cool slightly before serving.
