Soba with Pork and Peanut Sauce

Asian buckwheat noodles with tender pork, vegetables and creamy peanut sauce

Buckwheat noodles (soba) — 50 г

Sunflower oil (refined) — 7 мл
- Cook the buckwheat soba noodles in boiling salted water according to package instructions (usually 4-5 minutes). Drain and rinse with cold water.
- Slice the pork tenderloin into thin strips against the grain.
- Slice the red and yellow bell peppers into thin strips.
- Slice the leek into thin rings (use the white and light green parts).
- Finely chop the chili pepper, grate the ginger, and mince the garlic.
- In a small bowl, combine peanut butter, soy sauce, rice vinegar, honey, half of the minced garlic and ginger. Add 2-3 tablespoons of water to thin the sauce and mix well until smooth.
- Heat sunflower oil in a wok or large skillet over high heat. Stir-fry the pork for 2-3 minutes until golden brown.
- Add bell peppers, leek, chili, remaining garlic and ginger to the meat. Cook, stirring constantly, for another 3-4 minutes.
- Add the cooked soba noodles to the skillet and pour in the peanut sauce. Toss and heat everything together for 1-2 minutes.
- Divide the dish into portions, sprinkle with crushed roasted peanuts on top and serve immediately.
