Description

An unusual Asian-style appetizer: eggs marinated in a strong tea-soy brine with ginger, garlic and honey, served with cucumber, cilantro and sesame.

  1. Hard-boil the eggs, cool and carefully peel them.
  2. Prepare the marinade: in a saucepan combine soy sauce, water, black tea, honey, sliced ginger and crushed garlic. Bring to a boil and simmer for 5-7 minutes.
  3. Place the peeled eggs into the hot marinade, fully submerging them. Leave for at least 1-2 hours, preferably overnight in the refrigerator.
  4. Slice the cucumber into thin slices or strips.
  5. Remove the eggs from the marinade and cut each in half.
  6. Arrange the cucumber on a plate and place the egg halves on top.
  7. Drizzle with a little marinade, sprinkle with sesame seeds and finely chopped cilantro.
