Description

Crispy puff pastry pockets with tender cottage cheese and juicy cherries, topped with a light lemon glaze

  1. Combine cottage cheese with powdered sugar, half an egg and vanilla pudding powder. Mix until smooth without lumps.
  2. Drain the cherries in a sieve to remove excess liquid.
  3. Place a sheet of puff pastry on a baking tray lined with parchment. Spread the cottage cheese mixture evenly, leaving a small border, and arrange cherries on top.
  4. Cover the filling with the second sheet of pastry (or fold the sheet in half). Gently press the edges to seal so the filling doesn't leak.
  5. Cut the pastry into portions with a sharp knife, without separating them too much. Brush the surface with the remaining beaten egg.
  6. Bake in a preheated oven at 200 °C for about 20 minutes until the pastries rise and turn golden brown.
  7. For the glaze, mix powdered sugar with lemon juice, adding juice gradually until you reach a drizzling consistency.
  8. Let the pastries cool slightly and drizzle the glaze on top.
