Description

Classic Italian pasta with a delicate sauce of eggs, parmesan and crispy bacon.

  1. Cook spaghetti in salted water until al dente. Drain, saving 50 ml of pasta water.
  2. Cut bacon into small strips and fry in a dry pan until crispy with a crushed garlic clove (remove garlic afterwards).
  3. In a bowl, mix egg yolks, cream, grated parmesan (save some for serving) and plenty of pepper.
  4. Add hot spaghetti to the bacon pan, remove pan from heat.
  5. Quickly pour the egg mixture into the spaghetti, stirring vigorously. Add a little pasta water for a delicate creamy consistency.
  6. Serve immediately, sprinkled with remaining parmesan and black pepper.
