Description

A diet version of the legendary cake: delicate whole wheat flour crusts, a light custard, and vibrant berry and cream sauces.

  1. Prepare the dough: mix cottage cheese, 1 tbsp of erythritol, a whole egg, and melted coconut oil.
  2. Sift whole wheat flour with baking powder, knead the dough. Divide into 3-4 equal parts and refrigerate for 20 minutes.
  3. Prepare the custard: mix the egg yolk, remaining erythritol (save a pinch for raspberries), and corn starch. Pour in 50 ml of cold milk, stir thoroughly.
  4. Bring the remaining 150 ml of milk to a boil. Pour it in a thin stream into the egg-starch mixture, whisking constantly.
  5. Return the mixture to the saucepan and cook over low heat until thickened. Remove from heat, add vanillin, cover with plastic wrap 'in contact', and let cool.
  6. Prepare the raspberry sauce: blend 40 g of raspberries with stevia and strain through a sieve to remove seeds.
  7. Prepare the cream sauce: mix Greek yogurt with the cooled custard until smooth.
  8. Roll out each piece of dough very thinly, cut out the shape of the future cake layer. Place the layers along with the scraps on a parchment-lined baking sheet and bake in a preheated oven at 180°C (350°F) for 5-7 minutes until golden. Cool.
  9. Crush the baked scraps into crumbs. Assemble the cake: spread the cream sauce on a cake layer, repeat the layers. Cover the top and sides with cream and sprinkle with crumbs.
  10. Before serving, drizzle the cake portion with raspberry sauce and garnish with the remaining fresh raspberries.
