Tender pork ribs in sweet and sour kiwi honey marinade with refreshing tomato, strawberry and cottage cheese salad

  1. Peel the kiwi and mash into a puree. Finely chop the onion and mince the garlic.
  2. Mix kiwi, onion, garlic, honey and chili flakes. Season with salt and pepper.
  3. Coat the ribs with marinade and leave for at least 30 minutes (preferably 2-4 hours).
  4. Preheat oven to 180°C (350°F). Wrap ribs in foil and bake for 60-70 minutes.
  5. Remove foil, increase temperature to 220°C (430°F) and bake for another 10-15 minutes until golden crust.
  6. For the salad, cut tomatoes into wedges, cherry tomatoes in half, strawberries into quarters.
  7. Tear tarragon and mint leaves, add to tomatoes and strawberries.
  8. Dress the salad with olive oil, salt and pepper, mix gently.
  9. Place ribs on a plate, salad next to it. Top the salad with grainy cottage cheese.
