Original appetizer of salted herring with pickled onions and a delicate cheese cream on a potato base

  1. Boil the potatoes in their skins until tender, cool, peel and cut into slices about 1 cm thick.
  2. Cut the red onion into thin half-rings. In a small bowl, mix water, vinegar, sugar, salt and allspice. Pour the marinade over the onion and leave for 20-30 minutes.
  3. Fillet the herring: remove the head, entrails, skin and bones. Cut the fillet into pieces 2-3 cm wide.
  4. Prepare the cream: mix cream cheese, sour cream, egg yolk, finely chopped dill, add a pinch of salt and 1 tsp of sugar. Stir until smooth.
  5. Place 1 tsp of the cheese cream on each potato slice.
  6. Top the cream with a piece of herring.
  7. Place some pickled onion on top of the herring.
  8. Garnish with a sprig of dill if desired and serve.
