Description
Hearty lavash burrito with egg, sausage, cheese and beans — a quick Mexican-style breakfast or snack
- Slice the sausage into rounds and fry in a pan with vegetable oil until golden brown
- Crack the egg into a bowl, add a pinch of salt and lightly beat with a fork
- Pour the egg into the pan with the sausages and stir quickly, cook until the egg mixture is set
- Dice the tomato into small cubes and finely chop the cilantro
- Grate suluguni and cheddar on a coarse grater
- Lay the lavash on a work surface
- Place the warm filling in the center of the lavash: scrambled eggs with sausages, beans, tomatoes, cilantro
- Sprinkle with grated cheeses on top
- Fold the lavash into an envelope or roll, tucking in the edges
- Toast the burrito in a dry pan for 1-2 minutes on each side until golden brown, so the cheese melts
- Serve hot, cut in half diagonally
