Description
A lighter diet version of the classic Russian meat skillet with pickles. A hearty hot dish without excess fat.
- Slice the beef into thin strips against the grain. Peel the potato and cut into similar strips.
- Heat a skillet with 1/2 tbsp of olive oil and sear the beef over high heat until golden brown, about 4-5 minutes.
- Add the remaining oil, place the potatoes in the pan and fry with the meat for 5-7 minutes, stirring occasionally.
- Slice the onion into thin half-rings and the mushrooms into slices. Cut the pickled cucumbers into strips.
- Push the meat and potatoes to the side of the skillet, add the onion and sauté for 2 minutes, then add the mushrooms and cook for another 3 minutes until the liquid evaporates.
- Add the pickles, tomato paste, salt and pepper. Pour in hot water, add the bay leaf and mix everything well.
- Reduce heat to low, cover with a lid and simmer for 20-25 minutes until the beef is fully cooked. 5 minutes before it's done, add the minced garlic.
- Remove from heat, discard the bay leaf and let it rest covered for 5 minutes before serving.
