Bell Peppers Stuffed with Pearl Barley
Description
A healthy and hearty dish of bell peppers stuffed with pearl barley and vegetables. Perfect for a balanced diet.
- Rinse the pearl barley and boil until half-cooked (about 20 minutes) in salted water.
- Finely chop the onion and grate the carrot on a coarse grater.
- Heat olive oil in a pan, sauté the onion until translucent, add the carrot and cook for another 3-4 minutes.
- Add tomato paste to the vegetables, stir and simmer for 2 minutes.
- Mix the vegetable sauté with the half-cooked pearl barley, season with salt and pepper.
- Cut the tops off the peppers and remove the seeds, keeping the peppers intact.
- Fill the peppers with the prepared barley and vegetable stuffing.
- Place the stuffed peppers in a pot or saucepan, add water to reach half the height of the peppers.
- Cover with a lid and simmer over low heat for 25-30 minutes until the peppers are soft and the barley is fully cooked.
- Serve hot, garnished with fresh herbs if desired.
