Description

A healthy and hearty dish of bell peppers stuffed with pearl barley and vegetables. Perfect for a balanced diet.

  1. Rinse the pearl barley and boil until half-cooked (about 20 minutes) in salted water.
  2. Finely chop the onion and grate the carrot on a coarse grater.
  3. Heat olive oil in a pan, sauté the onion until translucent, add the carrot and cook for another 3-4 minutes.
  4. Add tomato paste to the vegetables, stir and simmer for 2 minutes.
  5. Mix the vegetable sauté with the half-cooked pearl barley, season with salt and pepper.
  6. Cut the tops off the peppers and remove the seeds, keeping the peppers intact.
  7. Fill the peppers with the prepared barley and vegetable stuffing.
  8. Place the stuffed peppers in a pot or saucepan, add water to reach half the height of the peppers.
  9. Cover with a lid and simmer over low heat for 25-30 minutes until the peppers are soft and the barley is fully cooked.
  10. Serve hot, garnished with fresh herbs if desired.
