Description

Hearty meat stew with pork, smoked ribs, white beans and mushrooms

  1. Soak the beans in cold water for 4-6 hours or overnight, then boil until tender for about 40-50 minutes
  2. Cut the pork shoulder into 2-3 cm cubes, divide the smoked ribs into portions
  3. Heat a pan with sunflower oil, fry the pork until golden brown on all sides
  4. Add sliced onion and carrot rounds to the meat, sauté for 5-7 minutes
  5. Slice the mushrooms, add to the pan and cook for another 5 minutes
  6. Add tomato paste, mustard seeds and rosemary, stir
  7. Pour in 300 ml of hot water, add the smoked ribs, bring to a boil
  8. Reduce heat, cover and simmer for 40 minutes
  9. Add the cooked beans, season with salt to taste, simmer for another 10 minutes
  10. Serve the stew hot, sprinkled with chopped parsley and cilantro, with sour cream
