Refined warm salad with duck breast, caramelized pear and creamy dressing

  1. Score the duck breast skin in a crosshatch pattern, season with salt, pepper and thyme
  2. Heat a dry skillet and place the duck skin-side down, cook for 5-6 minutes until golden
  3. Flip the duck and cook for another 4-5 minutes until done, then remove from heat and let rest for 3-4 minutes
  4. Cut the pear in half, remove the core and slice thinly
  5. Melt butter in a clean skillet, add honey and caramelize the pear slices for 2-3 minutes on each side
  6. For the dressing, mix creamy curd cheese, Dijon mustard, wine vinegar, lemon juice and olive oil until smooth
  7. Arrange mixed salad leaves on a plate, top with caramelized pear slices
  8. Slice the duck breast thinly against the grain and place on the salad
  9. Drizzle with dressing, sprinkle with chopped walnuts and serve immediately
