Description

Juicy whole chicken baked with citrus fruits and spices. A festive dish with the aroma of mandarins, cinnamon and cloves.

  1. Rinse the chicken and pat dry with paper towels. Rub with salt inside and out.
  2. Peel the mandarins. Separate 3 mandarins into segments, leave 2 whole or cut in half.
  3. Peel the garlic and cut cloves in half. Stud the chicken with garlic: make small cuts in the breast and thighs and insert garlic.
  4. Place mandarin segments, 3-4 cloves and 5 allspice berries inside the chicken cavity.
  5. In a small bowl, mix vegetable oil, paprika and cinnamon. Brush the chicken with this mixture on all sides.
  6. Place the remaining mandarins, cloves and allspice in a baking dish. Place the chicken breast-side down on top.
  7. Bake in a preheated 190°C oven for 60-70 minutes, basting occasionally with the pan juices.
  8. Flip the chicken breast-side up, increase temperature to 210°C and bake for another 15-20 minutes until golden brown.
  9. Remove the chicken from the oven, cover with foil and let rest for 10 minutes. Serve with the baked mandarins.
