Description

Spicy roast pork in an orange-honey glaze with fragrant rice, dried apricots and figs

  1. Rub the pork with salt, adjika, turmeric and pepper. Leave to marinate for 20 minutes.
  2. Slice the onion into half rings, crush the garlic with a knife.
  3. Sear the pork in a hot pan with oil until golden brown on all sides.
  4. Add onion, garlic, cloves, cumin and peppercorns. Cook for 3-4 minutes.
  5. Pour in orange juice, add cinnamon and half an orange cut into slices.
  6. Cover and simmer over low heat for 40-50 minutes until the meat is tender.
  7. Rinse the rice. Toast it in a pan with oil for 1 minute, add 120 ml water and cook for 15 minutes.
  8. Chop dried apricots and figs, add to the rice 5 minutes before done, salt to taste.
  9. Take out the pork, let it rest for 5 minutes, slice.
  10. Serve the pork with rice, drizzling the meat with orange glaze from the pan.
