Description

Restaurant-style dish: juicy red fish fillet with golden potatoes and delicate creamy Hollandaise sauce.

  1. Peel and slice potatoes. Fry in some of the butter until golden brown, season with salt
  2. Pat salmon fillet dry with paper towel, season with salt and pepper on both sides
  3. Fry the fish in remaining butter for 3-4 minutes per side until cooked through
  4. For Hollandaise sauce, melt butter without boiling
  5. Separate egg yolks from whites. Whisk yolks in a double boiler with juice of half a lemon
  6. Slowly pour melted butter into whisked yolks, stirring constantly with a whisk until thickened
  7. Season the sauce with salt and pepper to taste
  8. Plate fried potatoes, top with fish, drizzle with Hollandaise sauce
