Description

Juicy whole trout grilled on a grid, served with a light salad of bell peppers, feta and mint.

  1. Scale and gut the trout, rinse thoroughly and pat dry with paper towels.
  2. Make several shallow diagonal cuts on both sides of the fish.
  3. Rub the trout with salt and pepper outside and inside, drizzle with 5 ml of olive oil.
  4. Heat the grill to medium heat. Place the trout on an oiled grid.
  5. Grill the fish for 6-8 minutes on each side until golden and fully cooked.
  6. While the fish is cooking, cut the bell peppers into thin strips and the red onion into thin half-rings.
  7. Finely chop the mint and parsley.
  8. In a bowl, mix the peppers, onion, herbs, add the remaining olive oil, salt and pepper to taste.
  9. Squeeze the juice of a quarter lemon into the salad and toss.
  10. Carefully transfer the cooked trout to a plate.
  11. Top the fish or place next to it the pepper salad, crumble the feta.
  12. Serve immediately, garnished with a lemon slice.
