Turkey Satsivi
Description
Classic Georgian turkey dish in a spicy walnut sauce with adjika and khmeli-suneli
- Cut turkey breast fillet into medium-sized pieces
- Heat vegetable oil in a pan and fry turkey until golden brown on all sides (about 10-12 minutes)
- Season with salt, add some water and simmer covered for 15-20 minutes until cooked through
- Meanwhile, grind walnuts in a blender or meat grinder to a paste consistency
- Peel garlic and mash with salt, add to walnut paste
- Add adjika and khmeli-suneli to walnut mixture, mix thoroughly
- Gradually pour warm broth from turkey (or boiled water) into walnut mixture, bringing to thick sauce consistency
- Pour walnut sauce over cooked turkey and heat on low for 5-7 minutes without boiling
- Remove from heat and let satsivi rest for 10-15 minutes
- Serve garnished with pomegranate seeds, finely chopped cilantro and parsley
